Homemade Breakfast Sausage Patties

Ingredients
 

  • 1 lb ground pork
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/4 tsp cayenne pepper optional, for heat
  • 1 tsp dried sage
  • 1/2 tsp dried thyme
  • 1/4 cup breadcrumbs optional, for binding
  • 1 tbsp olive oil or butter for cooking

Instructions

  • In a large mixing bowl, combine the ground pork with all the seasonings (salt, pepper, garlic powder, onion powder, smoked paprika, cayenne pepper, sage, thyme).
  • If desired, add breadcrumbs to help bind the patties. Mix well with your hands or a spoon until all ingredients are evenly incorporated.
  • Form the mixture into small patties, about 2 inches in diameter. You should get approximately 10-12 patties.
  • Heat olive oil or butter in a skillet over medium heat.
  • Add the patties to the skillet in a single layer. Cook for 3-4 minutes per side, or until golden brown and cooked through (internal temperature should reach 160°F or 71°C).
  • Transfer the cooked patties to a plate lined with paper towels to drain excess oil.
  • Serve warm with eggs, pancakes, or your favorite breakfast sides.

Notes

  • Double Check! Be sure you’re using pumpkin puree and not pumpkin pie filling, which has spices and will be overpowering.
  • Measure accurately. Use the spoon and level method for measuring flour to ensure you use the right amount.
  • Don’t skip the paper towels. If you add the pumpkin right out of the can, it’ll be too wet.
