In a large mixing bowl, combine the ground pork with all the seasonings (salt, pepper, garlic powder, onion powder, smoked paprika, cayenne pepper, sage, thyme).
If desired, add breadcrumbs to help bind the patties. Mix well with your hands or a spoon until all ingredients are evenly incorporated.
Form the mixture into small patties, about 2 inches in diameter. You should get approximately 10-12 patties.
Heat olive oil or butter in a skillet over medium heat.
Add the patties to the skillet in a single layer. Cook for 3-4 minutes per side, or until golden brown and cooked through (internal temperature should reach 160°F or 71°C).
Transfer the cooked patties to a plate lined with paper towels to drain excess oil.
Serve warm with eggs, pancakes, or your favorite breakfast sides.
